聖荷西莊園（Finca San Jose Estate）是個悠久的莊園，
位於哥倫比亞中部的Caldas卡爾達斯省，標高約海拔1750公尺，
這幾年在精品咖啡浪潮中一直嘗試找到自己的一條路。

聖荷西莊園的男主人除了咖啡園外，還有萊姆酒橡木桶製作及蘭姆酒釀造的工作，
某次陪從事蘭姆酒製造的先生將原酒裝桶、熟成，
靈機一動想到──假如今天把咖啡生豆放進橡木桶內，是否會跟原酒一樣，
吸收橡木桶風味，達到桶成效果呢？

因此Monsalve Botero從2013年開始嘗試了以不同陳年長度的哥倫比亞橡木桶，
進行不一樣發酵時間的釀酒式低溫發酵，這樣實驗、挑選出最合適的桶子和發酵時間長短。
並於2107年成功找到最合適的組合，達到特殊和滿意的風味特色，
製作出別于傳統水洗的蘭姆酒桶發酵風味咖啡。
